This menu was made for a class project consisting in learning the preparation of a buffet. Not only did her and her class had to learn all the techniques of a cold & hot buffet, but each of them had to come up with their own buffet menu & create the recipe for each items.
For this assignments, students were asked to follow specific instructions like including pates, terrines, smoked & current meats and fishes, mousses, canapés, salads, basically summarizing all the techniques they learned in class by creating their own recipes...
And with the Christmas celebrations coming up, I thought this menu was a nice inspiration for Christmas festivities !
